In the South chitlins are traditionally prepared by first cutting them into pieces and then washing them and boiling them with flavor enhancers, such as onions and vinegar. In some recipes the chitlins are then breaded and fried, in which case they are dipped in egg and cornmeal or in crushed saltines before being cooked in oil or animal fat.
